The South Indian staple, idlis are traditionally made with dal and rice. However, if you want to give them a healthier and gluten-free twist, here is a quick recipe to prepare oats idli.
1 cup rolled oats 1/2 cup sooji 1/2 cup dahi 1 tablespoon finely chopped coriander leaves 1 teaspoon grated ginger 1/2 teaspoon mustard seeds 1/2 teaspoon urad dal 1/4 teaspoon hing 2-3 curry leaves 1/2 teaspoon eno fruit salt Salt to taste 2 tablespoons oil Water as needed
Lightly roast rolled oats till fragrant. Grind them into a coarse powder.
Mix with sooji, dahi, and water till you get a thick batter. Add in grated ginger and coriander leaves.
Make the tempering with mustard seeds, urad dal, hing, curry leaves, and salt.
Pour the tempering over the batter and mix well. Mix in eno fruit salt just before steaming.
Grease the idli moulds, fill them with the batter, and steam for 10-12 minutes.
Let the oats idli cool and serve them with sambar and coconut chutney.
