Nutritious Vegan Mexican Macaroni Salad

This Mexican macaroni salad is actually nutritious! This recent is Gluten-free, vegan, and incredibly colorful. You will love this for sure!

Ingredients

2 ½ cups dry macaroni 250g 1 yellow pepper diced avocado diced 1 pint cherry tomatoes halved 1 red onion chopped ⅔ cup sweet corn kernels 120g 1 can black beans rinsed 1 cup salsa 250g 2 tablespoons olive oil 1 tablespoon red wine vinegar ½ tablespoon taco spices ¼ cup chopped coriander

Step 1

Take a pan boil water and Cook the macaroni according to package directions. Drain and rinse under cold water

Step 2

When it’s done nicely dice all veggies you want to add in the bowl. Mix them super well.

Step 3

Now add vinegar and spices and mix them thoroughly. The flavor of spices and veggies will be tempting.

Step 4

Now take a large serving bowl add all the ingredients and add the boiled macaroni and toss well.

Step 5

Mix the veggies, spices and Macaroni and serve it. Garnish with coriander and enjoy!
