Lauki Thepla, a nutritious and flavourful Gujarati flatbread, is a delightful way to incorporate bottle gourd (lauki) into your diet. This wholesome dish is perfect for breakfast, lunch, or as a snack. Here’s a simple recipe to make lauki thepla at home.
1 cup grated lauki (bottle gourd) 1 ½ cups whole wheat flour 2 tbsp besan (gram flour) 1 tsp ginger-green chilli paste 1 tsp cumin seeds 1 tsp ajwain (carom seeds) ½ tsp turmeric powder 1 tsp red chilli powder 1 tsp coriander powder 1 tsp garam masala 2 tbsp fresh coriander leaves, chopped Salt to taste 2 tbsp yoghurt 2 tbsp oil for kneading and extra for cooking
In a mixing bowl, combine the grated lauki, whole wheat flour, besan, and all the spices. Add ginger-green chilli paste, cumin seeds, ajwain, chopped coriander leaves, and salt. Mix well.
Add yoghurt and 2 tablespoons of oil. Knead into a soft dough. Add water if necessary.
Divide the dough into equal portions and roll each into a ball. Roll out each ball into a thin circle using a rolling pin.
Heat a tawa and cook the theplas on medium heat, applying oil on both sides, until golden brown.
Serve hot with yoghurt, pickle, or chutney.
