Nutritious Cabbage Soup Is Perfect Light Dinner

Ingredients

2 tbsp olive oil 1 inch ginger 2 garlic cloves 4 tbsp spring onion 2 cups cabbage 1 carrot ½ capsicum Salt to taste 1 tbsp vinegar ½ tsp pepper powder 2 tbsp mint 2 tbsp coriander 1 tbsp cornflour ½ cup water

Step 1 

In a kadai, heat oil and add ginger, garlic and spring onions. Saute for 30 seconds

Step 2 

Add shredded cabbage, carrots and capsicum. Stir fry for 2 mins.

Step 3 

Add water and salt. Mix well and bring it to boil.

Step 4 

In a bowl make a slurry of cornflour and water. Add it to the boiling soup.

Step 5 

Add vinegar and pepper powder and bring it to boil again.

Step 6

Garnish with some spring onions, mint and coriander leaves. Serve hot.
