When in doubt, always make poriyal. It is the easiest recipe to prepare in summer and enjoy with Malabari parotta. If you want to make it healthy, prepare beetroot poriyal loaded with essential nutrients. Here is the recipe to try out.
1 chopped green chilli 2 cups chopped or grated beetroot 10-12 curry leaves 2 tablespoons coconut oil A pinch of asafoetida (hing) ⅓ cup water 3-4 tablespoons grated coconut 1 teaspoon urad dal 1 teaspoon mustard seeds
Add oil to a hot pan and add mustard seeds. Once the seeds crackle, add urad dal and stir.
Add green chilli and hing. Saute the ingredients before adding grated beetroot.
Sprinkle salt to taste and splashes of water to prevent the ingredients from burning.
Once the water dries up and the beetroot has softened, fold in grated coconut.
Toss around the ingredients for a couple of minutes and turn off the flame.
Serve beetroot poriyal with rasam rice, sambar rice, or parotta.
