Spinach and Corn Spaghetti is a colourful and nutritious pasta dish that combines tender spaghetti with fresh spinach and sweetcorn, all tossed in a light garlic and olive oil sauce.
250g spaghetti 2 cups fresh spinach leaves 1 cup sweetcorn (fresh or frozen) 2 cloves garlic, minced 2 tbsp olive oil 1/4 cup grated cheese Salt and black pepper to taste 1/4 tsp red pepper flakes (optional)
Boil water, and add salt as per taste. Cook the spaghetti until soft. Drain and set aside.
In a pan, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
Now add the sweetcorn to the pan and cook for 2-3 minutes. Add the fresh spinach and cook.
Toss the cooked spaghetti into the pan with the spinach and corn. Mix well to combine.
Season with salt, black pepper, and red pepper flakes (if using).
Serve the spinach and corn spaghetti warm, garnished with grated cheese.
