Parsi new year celebrations call for a special dish you can easily whip up at home to celebrate with. Here is a classic Parsi recipe for Mutton Cutlets to make your party more festive.
500g mutton mince 1 potato, boiled and mashed 1 tsp ginger-garlic paste 1 onion, finely chopped 1 green chilli, finely chopped 1 tsp black pepper powder ½ tsp cinnamon powder Salt, to taste 4 tbsp coriander leaves, finely chopped 2 tbsp mint leaves, finely chopped 2-3 cups breadcrumbs Oil, for frying

Press the mutton mince and remove excess moisture, then transfer into a bowl.

Add the potato, onion, ginger-garlic paste, green chilli, black pepper, cinnamon powder, salt, coriander and mint leaves.

Mix well, then take a handful of mutton mix, roll it into a ball and flatten slightly to form the cutlets.

Place the breadcrumbs in a large plate and coat each mutton cutlet thoroughly with them.

Heat oil in a shallow pan. Once hot, add two-three cutlets at a time and pan fry each side until golden brown.

Remove from heat and drain on tissue paper or kitchen towels. Serve hot with chutney and salad.
