Pina-Colada Chia Pudding is a scrumptious dessert that is both creamy and refreshing, with flavours of pineapple and coconut that will provide you comfort in each bite. For a light and healthful dessert that nevertheless manages to satisfy your sweet tooth, try this easy yet decadent recipe.
1 cup pineapple chunks 2 tbsp honey 1 cup coconut milk 2-3 tbsp chia seeds
Blend pineapple chunks, honey, and coconut milk until smooth. Optionally, regular milk can be used instead of coconut milk.
Transfer the mixture into a serving dish and stir in chia seeds. Refrigerate for 3-4 hours or overnight until the pudding thickens to your liking.
Once thickened, serve the chia pudding in glasses, garnished with pineapple chunks and toasted coconut flakes. Enjoy!
