Sev Tamatar ki Sabzi is a delicious and tangy Gujarati dish, perfect for a quick and satisfying meal.
2 tomatoes, chopped 1 cup sev (crunchy chickpea noodles) 1 onion, chopped 2 green chilies, chopped 1 tsp cumin seeds 1/2 tsp mustard seeds 1/2 tsp turmeric powder 1 tsp red chili powder 1 tsp coriander powder Salt to taste 2 tbsp oil Fresh coriander for garnish
Heat oil in a pan and add cumin and mustard seeds. Add chopped onions and green chilies; sauté until onions are golden. Add tomatoes, turmeric, red chili, coriander powder, and salt. Cook until tomatoes are soft.
Add 1 cup of water and bring to a boil. Add sev just before serving and mix well. Garnish with fresh coriander and serve hot with roti or paratha.
