Oil-free vada pav is a healthier twist on the classic Indian street food, where the vada is traditionally deep-fried. In this version, we'll make the vada oil free while still maintaining its delicious flavours.
2 potatoes, mashed 1/4 cup chopped onions 2 green chilies, chopped 1 tsp ginger-garlic paste 1/2 tsp turmeric powder 1/2 tsp red chilli powder 1 tsp garam masala 1 tsp lemon juice Salt to taste Fresh coriander leaves 4 whole wheat pao buns
Mix mashed potatoes with chopped onions, green chillies, ginger-garlic paste, turmeric, red chili powder, garam masala, lemon juice, and salt.
Shape into vada and place on a non-stick pan on low-medium heat. Cook until golden brown on both sides. Use a little water to avoid sticking.
Cut the bun halfway from between and toast whole wheat pav on the pan.
Assemble the vada with green chutney inside the pav and serve hot. Enjoy with green chillies.
