Buttery, simple and high on deliciousness, shortbread cookies are a great accompaniment to your evening cup of tea or coffee. These 5-ingredient cookies are low on effort but highly rewarding, leaving the house filled with the scent of baking.
1.5 cups all-purpose flour ½ cup cornflour ¾ cup powdered sugar 250 grams soft butter 1 teaspoon vanilla extract
Preheat the oven to 150°C while you cream the butter and sugar in a mixing bowl until you have a light and fluffy mixture.
Add the vanilla extract and sift both types of flour into the mixture and fold gently to form a dough-like mixture.
Transfer to a clean, floured surface and wrap in cling film before allowing it to chill in the refrigerator for 15 minutes.
Roll it out into a 1-inch thick rectangle before cutting shapes of your choice and placing them on a baking tray.
Bake for 15-20 minutes in the oven, until lightly browned before reducing the temperature to 130°C and baking for an additional 10 minutes.
Remove from the oven once ready and sprinkle a few pinches of sugar crystals on top of each one while still hot. Serve warm.
