A delicate pink ice cream, flavoured with juicy and fresh pomegranate kernels, this dessert is a great make-ahead recipe to stock your freezer for sugar cravings during the week.

2 large pomegranates Juice of 1 lime 1.5 cups powdered sugar 2 cups heavy cream

Juice the two pomegranates and strain it properly to separate the seeds.

Mix in the lime juice and add to a bowl.

Add the sugar to the juice and mix well to dissolve it, before adding the heavy cream.

Using an electric whisk, continue to beat the mixture until soft peaks form.

Transfer to an air-tight container and store in the freezer for at least 4 hours. Scoop and serve.
