Explore the luscious world of no-bake strawberry cheesecake, where creamy delight meets the brilliant richness of fresh strawberries.
2 cups cookie crumbs 1/2 cup unsalted butter 3 cups fresh strawberries 1/4 cup granulated sugar 1 tbsp lemon juice 1 cup cream cheese 1 cup powdered sugar 1 tsp vanilla extract 2 cups whipped cream
In a bowl combine cookie crumbs and melted butter combine well and Press the mixture into the bottom of pan.
Place it in the refrigerator to chill. In a blender puree 2 cups of the sliced strawberries until smooth.
Add the granulated sugar and lemon juice to the puree and blend. In bowl, beat the cream cheese until smooth and creamy.
Add the powdered sugar and vanilla extract, and continue beating until fluffy.
Fold in the strawberry puree mixture into the cream cheese. Gently fold in the whipped cream and blend.
Now pour the strawberry cream cheese over the prepared cookie base. Place the sliced strawberries on top.
Cover the pan with plastic wrap and refrigerate for at least 4 hours, or until it’s set.
Once chilled and set, Slice and serve the delicious no-bake strawberry cheesecake.
