A popular tea-time snack from South India, which is very similar in flavour to Murukku and Chakli, Nippattu from the state of Karnataka and can be prepared with just a handful of ingredients.
1/2 cup roasted peanuts 2 cup rice flour 1/4 cup semolina 1 tablespoon cumin seeds 2 stalks curry leaves Refined oil as required 1/2 cup roasted chana dal 2 tablespoon refined flour 2 tablespoon sesame seeds 1/4 teaspoon asafoetida Salt as required 1/2 tablespoon red chilli powder
Blend roasted peanuts and dal to form a coarse mixture.
Add the coarse mixture to a bowl with rice flour, refined flour, sooji, sesame seeds, cumin seeds, asafoetida, curry leaves, red chilli powder and salt and mix well.
Now heat 2 tbsp oil and pour the hot oil on the dry ingredients. Mix well. Now use your hands to make a crumbly flour. Add 1/4 cup of water to the flour, knead with your hands.
Add water in batches and keep kneading till a smooth and soft dough is formed. Once done pinch out small balls from the dough and flatten them to form small discs.
Now heat sufficient oil in a pan. Drop the discs into the pan and fry from both sides until golden in colour. Nippattu is now ready to be served. Pair with a piping hot cup of tea or coffee.
