Nimki: Make This Perfect Tea-Time Snack For The Festive Season

Nimki is a delightful, crispy Indian snack, perfect for festive occasions like Diwali. Made from flour, carom seeds, and spices, these golden, diamond-shaped treats are deep-fried to perfection. Their savoury taste and crunch make them a popular choice with tea or chutney.

Ingredients

1 cup all-purpose flour (maida) 2 tbsp semolina (rava) 2 tbsp oil 1/2 tsp carom seeds (ajwain) 1/2 tsp black pepper Oil Salt

Step 1

In a mixing bowl, combine the flour, semolina, carom seeds, salt, and crushed pepper. Add 2 tbsp of oil or ghee and mix until the flour has a crumbly texture. 

Step 2

Gradually add water and knead to form a firm dough. Cover and set aside for 15-20 minutes.

Step 3

Divide the dough into small balls. Roll each ball into a thin circle, then cut it into diamond shapes with a knife or pizza cutter.

Step 4

Heat oil in a pan over medium heat. Fry the nimki pieces in batches until golden and crispy. Drain on a paper towel to remove excess oil.

Step 5

Let the nimki cool completely before storing in an airtight container to keep them crisp.
