Cheesecake is a yearround favourite, and the New York Baked Cheesecake is one of the most popular varieties around. With this simple recipe, you can recreate the magic of your favourite cheesecake at home.

2 cups graham cracker crumbs 1/2 cup unsalted butter, melted 4 packages cream cheese, softened 1 1/4 cups granulated sugar 1 teaspoon vanilla extract 4 large eggs 2/3 cup sour cream 2/3 cup heavy cream

In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.

In a large mixing bowl, beat the cream cheese until smooth and creamy. Add the sugar and vanilla extract to the cream cheese, and continue beating.

Add the eggs, one at a time, beating well after each addition. Mix in the sour cream and heavy cream until the batter is smooth and velvety.

Pour the cream cheese mixture over the crust in a greased springform pan. Tap the pan on the counter a few times to release any air bubbles.

Bake in the preheated oven for about 1 hour at 170 C or until the edges are set, and the centre is slightly jiggly.

Turn off the oven, crack the oven door, and let the cheesecake cool inside for 1 hour. Remove and let it cool to room temperature before refrigerating overnight.
