30 ml vodka 30 ml blue curaçao syrup 20 ml coconut milk/coconut cream 30 ml pineapple juice 1 teaspoon honey 1 teaspoon desiccated coconut/coconut flakes
Apply honey to the rim of a cocktail glass of your choice and dip in the desiccated coconut and set aside. In a blender, add the vodka, blue curaçao, coconut milk, pineapple juice and ice and blitz until frothy. Pour the mixture into your rimmed glass and serve with a thin slice of pineapple to garnish.
