Made with creamy coconut milk, bite-sized rice dumplings and sweetened with jaggery, this regional sweet dish from Karnataka is especially made during festivals; but can also be enjoyed for dessert after a meal.

1 cup rice, soaked ½ cup jaggery 1.5 cups water 1 cup coconut milk 1 pinch salt

Grind the soaked rice into a fine paste using a little bit of water and set a couple of teaspoons aside.

Add the batter to a pan and cook on a medium heat for five minutes, until thickened.

Cool slightly and shape into bite-sized balls while you combine the jaggery, water and salt in a separate pan.

Bring to a boil by stirring occasionally, until the jaggery dissolves before gently dropping the rice balls into the syrup.

Cook for 7-10 minutes while you stir the reserved batter into the coconut milk.

Add this mixture to the jaggery syrup and cook for 3-4 minutes, until thickened. Serve warm or cold.
