Hing Jeera Bhindi is a flavourful and simple dish perfect for Navratri fasting. Made without onions and garlic, this recipe highlights the simplicity of okra, with the aromatic flavours of hing and jeera.
Wash and dry 250g of bhindi (okra). Cut them into 1-inch pieces.Heat 2 tbsp of ghee in a pan.Add 1 tsp of cumin seeds and a pinch of hing. Let them sizzle.
Add the chopped bhindi and sauté on medium heat for 5-7 minutes.Season with rock salt (sendha namak) and black pepper powder to taste.
Add ½ tsp of dried mango powder (amchur) for a tangy twist.Cook until the bhindi is tender and lightly crispy.
Serve hot with kuttu ki roti or samak rice during Navratri.
