Aloo Ki Sabzi is a simple and tasty North Indian dish where boiled potatoes are simmered in a tomato-based gravy. This sabzi is a staple during Navratri in many Indian homes and is served with kuttu puri, parathas or rotis for a comforting meal.
4 medium potatoes 2 tbsp oil 1 tsp cumin seeds 1 pinch asafoetida 2 green chillies 1-inch ginger 2 medium tomatoes ½ tsp turmeric powder 1 tsp coriander powder ½ tsp red chilli powder Salt to taste 1 cup water Fresh coriander leaves
Add cumin seeds and asafoetida, and let them splutter. Saute for a minute until fragrant.
Add the tomato puree and cook until the oil separates.
Mix turmeric powder, coriander powder, red chilli powder, and salt. Cook for 2 minutes.
Add the boiled and diced potatoes and mix well to coat them with the masala.
Add water, mix well and let it simmer for 5-7 minutes until the flavours combine.
Sprinkle chopped coriander leaves on top and serve hot with puris or rotis.
