Kuttu Dosa is a healthy and crisp recipe made using buckwheat flour and colocasia. Filled with a tasty potato mixture, it’s a perfect vrat-friendly option for Navratri days. Just a few easy steps and kuttu dosa is ready without compromising flavour.
3 boiled potatoes Ghee (for frying) Salt to taste (sendha namak for fasting) 1/2 tsp red chilli powder 1/2 tsp ginger, chopped 5 tbsp buckwheat flour (kuttu) 2 tbsp boiled arbi (colocasia) 1/2 tsp ajwain (carom seeds) 1 tsp green chillies, chopped
Heat ghee in a pan, crush the boiled potatoes, and mix in salt, red chilli powder, and ginger.
Toss the mixture for a few minutes until it turns light brown, then set aside.
In a bowl, mash the boiled arbi and mix with buckwheat flour, salt, and some water.
Add ajwain, red chilli powder, ginger, and green chillies. Mix until smooth and flowing in consistency.
Heat a flat pan, dab ghee, pour a ladle of batter, and spread evenly. Cook for a few minutes, spread ghee around the edges to make it crisp, then flip and cook the other side.
Place the potato filling on the dosa, fold it, and serve hot with mint and coconut chutney.
