Kaddu ki Subzi is a popular dish during Navratri, prepared without onion and garlic to adhere to fasting guidelines. Made with kaddu (pumpkin), this mildly spiced curry uses ingredients like cumin seeds, rock salt, green chillies, and a touch of jaggery for sweetness.
500 grams pumpkin 2 tbsp ghee 1 tsp cumin seeds 1-2 green chillies 1/2 tsp turmeric powder 1 tsp coriander powder 1/2 tsp red chilli powder 1 tsp dry mango powder Sendha namak
In a pan, heat ghee over medium heat. Add cumin seeds and let them splutter.
Add chopped green chillies and sauté for a minute.
Add turmeric, coriander powder, and red chilli powder. Add the diced pumpkin to the pan and coat it with the spices. Add salt to taste.
Cover and cook on low heat for about 15-20 minutes, stirring occasionally until the pumpkin is soft and tender.
Add dry mango powder or a squeeze of lemon juice for tanginess. Stir well.
Garnish with fresh coriander leaves and serve hot with kuttu ki puri or samak rice.
