Sabudana Vada is a popular Indian snack, also eaten during fasting periods. Here's how to make these crispy fritters.

Ingredients

1 cup sabudana (tapioca pearls) 2 potatoes 1/2 cup roasted peanuts 1-2 green chilllies 1 tsp of cumin seeds 1 tsp grated ginger 2 tbsp of coriander leaves Rock salt

Step 1

Rinse the sabudana in water until the water runs clear to remove excess starch. Soak it overnight.

Step 2

In a large mixing bowl, combine sabudana, mashed potatoes, ground-roasted peanuts, chopped green chillies, cumin seeds, grated ginger, and coriander leaves. Add salt.

Step 3

Mix all the ingredients to form a dough-like consistency.

Step 4

Grease your palms with a little oil. Take a small portion of the mixture and flatten it slightly to form a patty.

Step 5

Heat oil in a kadhai. Drop a small piece of the mixture into the oil; if it sizzles and rises to the surface, gently slide a few wadas into the hot oil. Don’t overcrowd the pan.
