A sweet and savoury preparation made with ripe pumpkin and minimal spices, this pumpkin sabzi is ideal for those observing a fast and looking to eat a substantial meal after.

500 grams pumpkin, diced 1 cup tomato puree 1 teaspoon cumin seeds 2 green chillies, slit 1 tablespoon ghee ½ cup water 2 tablespoons freshly chopped coriander Rock salt, to taste

Heat the ghee in a pan and allow the cumin seeds and green chillies to splutter.

Add the tomato puree and cook for 3-4 minutes, before adding the diced pumpkin.

Season with salt and cook for a couple of minutes before adding the water and simmering for 10 more minutes.

Stir in intervals to ensure that the mixture does not stick to the bottom of the pan.
