Navratri 2023: Upvass Malai Kofta To Pair With Buckwheat Rotis

Melt-in-your-mouth soft koftas loaded with potatoes and paneer, is a fasting spin-off on the popular restaurant-style malai koftas. Simmered in a creamy tomato gravy, these deep-fried balls of deliciousness make fasting food feel like a treat.

INGREDIENTS

200 grams paneer, grated 2 boiled potatoes, peeled 1 tablespoon rajgira flour 1 teaspoon black pepper powder 1.5 cups tomato puree 6-7 cashews, soaked 1 teaspoon cumin powder 2 tablespoons ghee 3 green chillies, chopped 2 tablespoons fresh coriander, chopped Oil, for frying Rock salt, to taste

METHOD

To make the koftas, heat the oil in a pan while you combine the paneer, boiled potatoes, black pepper, salt and rajgira flour to make a mushy mixture.

METHOD

Divide into equal portions and shape into lemon-sized balls, before gently dropping them in the oil and frying until brown on the outside.

In a separate pan, heat the ghee and allow the green chillies to splutter.

Grind the cashews into a smooth paste and add it to the ghee and cook for a minute, before adding the tomato puree.

Simmer the mixture until the ghee starts to separate on the sides, and add the cumin powder.

Season the gravy with salt and drop the kofta balls into it, to simmer for a coupleof minutes.
