A simple fasting-special side dish made with a handful of ingredients, the kadhi is a comforting meal accompaniment to pair with sama ke chawal or buckwheat rotis.

¼ cup rajgira flour 1 cup fresh yoghurt 1 teaspoon cumin seeds 2 green chillies, chopped 3 teaspoons ghee 2 tablespoons coriander Water, as required Rock salt, to taste

Whisk together the yoghurt, rajgira flour and salt in a bowl and add twice the amount of water, as the yoghurt.

Heat the ghee in a pan and temper the cumin seeds and green chillies.

Pour the reserved yoghurt mixture gently into the pan and allow it to simmer for 8-10 minutes, until the raw taste of the flour disappears.

Stir every couple of minutes until the kadhi thickens in consistency and garnish with lots of chopped coriander. Serve warm.
