Kuttu ki khichdi, also known as buckwheat khichdi, is a delicious and satisfying meal for the Navratri fast. This recipe is wholesome and can be prepared on days other than Hindu fasting days because it uses common ingredients and spices. Buckwheat's warmth can be compensated by pairing it with a chilled yoghurt raita, plain yoghurt or fruit raita.

1 cup Kuttu 1 small diced and peeled potato 1/2 cup cubed pumpkin 1 tablespoon ghee 1 teaspoon of cumin seeds 1/2 teaspoon grated ginger 1 finely chopped green chilli Sendha namak Coriander leaves for garnishing 2 cups of water

The kuttu should be thoroughly drained after being rinsed and soaked for 15 to 20 minutes.

In a pan, heat the ghee and add the cumin seeds, grated ginger, and green chilli. Sauté just a bit.

Add the diced pumpkin and potato and sauté for a few minutes.

Add rock salt to taste and the drained kuttu.

Add 2 cups of water, stir thoroughly, and cook.

Cook until the khichdi has the consistency of porridge and the kuttu is sof

Serve hot with vrat-friendly sides like yoghurt or fruit raita, and garnish with chopped coriander leaves.
