1 cup Sama Rice ½ cup curd 1 tbsp desiccated Coconut 1 tbsp lemon juice 1 tsp roasted cumin seeds (optional) ½ tsp crushed red chili flakes 2 tbsp chopped Carrots ½ tsp citric acid ½ tsp baking powder Rock salt to taste Oil

First, rinse sama rice under running water. Now, transfer them to a bowl. Add water and soak them for atleast 2 hours.

Then, drain and transfer sama rice to a food processor. Also add curd, coconut, lemon juice, carrots, and spices.

Blend everything together. Meanwhile, heat water in a steamer pan and grease the idli moulds.

Add citric acid and ENO to the batter and whisk for 2-3 minutes. Transfer the batter into the greased idli moulds.

Transfer the moulds to the steamer pan. Cover the lid, and steam-cook for 6 to 7 minutes.

Do a toothpick test and when done, remove the hot idli moulds from the steamer pan. Let it cool and serve!
