Nadru chips are a popular street food in Jammu. They are made of thinly sliced kamal kakdi (lotus stem) that has been cooked to perfection. If you wish to experience the local Jammu delights, these golden, crunchy treats are a must-try.

1 large Lotus Stem Water – as required Salt – to taste ½ tsp Black salt 1 tsp Turmeric 1 tsp Chilli powder 1 tsp Green chilli paste 1 tsp Ginger garlic paste 1 tbsp Cornstarch 3 tbsp Gram Flour 1 tsp Chaat Masala 1 tsp Mint Powder

Always choose kamal kakdi that is thick and has flesh. Using a mandolin, peel it and cut it into thin slices. Soak for at least two minutes. Dry with a towel.
Mix all the ingredients for the kamal kakdi together. Fry in a large pot of heated oil right away. To achieve a crisp texture, cook until done.
Take it out and add the chaat masala and pudina powder. Toss it all together. Serve as a snack or as an accompaniment.
