Nachni Ambil, also known as Ragi Soup, is a nutritious and wholesome dish made from finger millet (ragi), rich in essential nutrients and flavours. This traditional soup is both delicious and healthful.

½ cup nachni (ragi) flour 2 cups water ½ cup buttermilk 2-3 cloves garlic (optional) ½ tsp cumin seeds ½ tsp mustard seeds 1-2 green chilies 8-10 curry leaves A pinch of asafoetida Salt to taste 1 tbsp oil Fresh coriander leaves for garnish

Mix nachni flour with 1 cup water to make a paste. In a pan, add this paste and 1 cup water. Simmer for 10-15 mins, stirring.

Mix buttermilk with a little water for desired consistency. Heat oil, add cumin, mustard seeds, garlic, green chilies, curry leaves, and asafoetida. Sauté for 1 min.

Add tempered mixture to the simmering nachni paste. Mix in buttermilk, and season with salt. Simmer for 5 mins. Serve Hot. Garnish with fresh coriander leaves.
