Nachni Ambil: Ragi-Based Maharashtrian Summer Beverage Recipe

Nachni ambil is a ragi-based beverage that is widely consumed in Maharashtra during summer. Not only is the drink nutritious, it is flavourful and tastes delicious. Here is a quick recipe for you to try during the heatwave in India. 

Ingredients

2 cups water 1 teaspoon cumin powder 4 cups buttermilk 2 teaspoon nachni flour Salt to taste 2 grated garlic cloves (optional) 1 chopped green chilli 2 tablespoons chopped coriander leaves

Step 1

In a small bowl, combine nachni flour with two tablespoons of water. Soak it overnight, add some more flour and water to it, and keep it aside.

Step 2

Heat water in a pan and when it comes to a boil, add nichni mixture to it. Keep stirring to prevent the formation of lumps.

Step 3

Put the mixture on the gas again and add garlic and spices. Cook it on a medium flame while stirring it.

Step 4

When ambil or the mixture thickens, turn off the flame and let the concoction cool off. 

Step 5

Add buttermilk to the mixture and combine it so that there are no lumps.

Step 6

Garnish the drink with coriander leaves, pour into glasses, and serve.
