Mysore Masala Dosa: A Delicious Gem From Karnataka

Ingredients

For dosa batter 2 cups dosa rice 1/2 cup urad dal 1 tsp fenugreek seeds 2 tbsp chana dal 1/4 cup thick beaten rice 1 tsp sugar Salt Water as required

For potato filling 2 potatoes 2 onions 1/2 tsp mustard 1/4 tsp cumin seeds 1 tsp urad dal 1 tsp chana dal 1/2 tsp ginger (chopped) 1/4 tsp turmeric powder A pinch of asafotida 4 green chilies Handful of curry leaves Handful of coriander leaves 4 tbsp cooking oil Salt

Ingredients

For Red Chutney 2 tbsp chana dal 4 red chili 8 to 10 shallots 5 garlic cloves 1/2 tamarind 2 tbsp grated coconut

Step 1

Rinse all the ingredients for dosa batter except beaten rice and soak them for at least 6 hours.

Step 2

When done, drain the water and preserve. Now, soak the beaten rice for 8 to 10 minutes and drain the excess water.

Step 3

Add all the soaked ingredients into a grinder and grind it well by adding water. Make a smooth and fluffy batter.

Leave the batter overnight for fermentation. When done, add salt and mix the batter well before using.

Step 5

For potato filling, heat a pan and add oil. Add whole spices, veggies and potatoes. Cook well and make a potato filling.

Step 6

For chutney, roast red chili, chana dal and garlic pods. When cooled, grind the mixture with tamarind and coconut.

Step 7

Now, spread a laddle full of dosa batter on the pan, spread a layer of red chutney and add potato filing. Let the dosa cook.
