A rich and flavourful dish combining mutton, lentils, and broken wheat, Mutton Khichda is a one-pot meal is perfect for special occasions and is often enjoyed during festivals.
500 grams mutton 1 cup mixed lentils (chana dal, urad dal, moong dal) 1 cup broken wheat (daliya) 2 tbsp ginger-garlic paste 2 onions, 2 tomatoes 2-3 green chillies
1 tsp turmeric powder 1 tsp red chili powder 1 tsp coriander powder 1 tsp garam masala powder 4 tbsp ghee or oil 2-3 bay leaves 4-5 cloves 2-3 green cardamom pods 1-2 black cardamom pods 1-inch piece of cinnamon stick 1 tsp cumin seeds
Soak the mixed lentils and broken wheat separately in water for at least 1-2 hours. In a bowl, mix the mutton pieces with ginger-garlic paste, turmeric powder, red chili powder, and salt. Let it marinate for about 30 minutes.
In a pressure cooker, heat ghee or oil. Add the mutton pieces and sauté. Add enough water to cover the mutton and pressure cook for about 15-20 minutes.
In another pressure cooker add the soaked lentils and broken wheat. Add enough water and a pinch of salt. Cook for 10-15 minutes.
In a large pot, heat the remaining ghee. Add the whole spices and sauté. Add the sliced onions and green chilies. Add the tomato puree and cook until the oil starts to separate. Add coriander powder and garam masala powder.
Add the cooked mutton along with its stock to the pot. Then add the cooked lentils and broken wheat mixture.
Reduce the heat and let the khichda simmer for 20-30 minutes Garnish with fresh cilantro, mint leaves, fried onions, and a squeeze of lemon juice.
