Whether you have guests coming over randomly one evening or you are in the mood for a lip-smacking creamy delight, the mushroom curry recipe fits right into the description. It pairs exceptionally well with naan and rice.
1 cup tomato puree 1 tsp chopped ginger 1 cup chopped onions 1 tsp chopped garlic 250 grams button mushrooms 2 tbsp curd Whole spices ½ tsp chilli powder & cumin seeds 2-3 green chillies ¼ tsp turmeric powder & garam masala 1 tsp dried fenugreek leaves 1 cup water 2 tbsp coriander leaves 1 tsp coriander powder
Rinse and dry button mushrooms to remove excess dirt and water.
Prepare onion-garlic paste by blending ginger, onion, green chillies, and garlic cloves.
In a heavy bottom pan, heat oil and saute a cinnamon stick, bay leaf, 2 cardamoms, 1 large black elaichi, 3-4 cloves, and a star anise.
Add cumin seeds, turmeric powder, and onion paste. Saute until the paste turns brown, and add tomato puree.
After 2-3 minutes of cooking, add yoghurt mixed with all the spices and roast the ingredients until the oil separates.
Meanwhile, saute mushrooms in a skillet with garlic and add to the curry. Top it with salt to taste, fenugreek leaves, and coriander leaves. Serve and enjoy.
