Indulge in the warmth of a comforting winter meal with this Mushroom Chicken Ragout. Packed with tender chicken, earthy mushrooms, and aromatic herbs, this recipe is a delightful blend of simplicity and rich flavours.
4 boneless, skinless chicken breasts, cut into chunks 2 tbsp olive oil 1 onion, finely chopped 2 garlic cloves, minced 2 cups mushrooms, sliced 2 carrots, peeled and diced 2 tbsp all-purpose flour 400 ml chicken broth 200 ml red wine 2 sprigs of fresh thyme Salt and pepper to taste Fresh parsley for garnish
Heat the olive oil in a large pan over medium heat. Add the chicken chunks and cook until browned on all sides. Remove the chicken from the pan and set aside.
In the same pan, add a bit more oil if needed. Sauté the chopped onion and garlic until softened.
Add the sliced mushrooms and diced carrots to the pan. Cook for a few minutes until the vegetables start to soften.
Sprinkle the flour over the vegetables and stir well to coat. This will help thicken the sauce.
Gradually pour in the chicken broth and wine, stirring continuously to avoid lumps. Bring the mixture to a simmer.
Add the browned chicken back to the pan, along with the fresh thyme. Season with salt and pepper to taste.
Cover the pan and let the ragout simmer for about 20-25 minutes, or until the chicken is cooked through and the vegetables are tender. Garnish with fresh parsley and serve.
