Loaded with nutrition and flavour, as well as making for a simple accompaniment to rotis or dal-rice, this easy Kerala-style preparation of moringa leaves is one for the books. Tempered with a handful of spices and aromatics, this thoran recipe allows the flavours of the fresh keerai to shine through.

2 packed cups moringa leaves 1 cup baby shallots, chopped 1-inch piece ginger, grated 1 teaspoon mustard seeds 1 teaspoon cumin seeds 6-7 curry leaves 1 teaspoon turmeric powder 1 teaspoon red chilli powder ¼ cup freshly grated coconut 1 tablespoon coconut oil Salt, to taste

Heat the coconut oil in a pan and temper the mustard seeds, cumin seeds and curry leaves.

Add the grated ginger, followed by the chopped shallots and sauté until slightly browned.

Add the spice powders and stir to combine before adding in the moringa leaves.

Season with salt and cook until the leaves are wilted in their own moisture.

Once all the liquid has evaporated, turn off the heat and sprinkle coconut on top. Serve hot.
