Mura nu Khariyu: A Gujarati Special Radish Stir Fry

Mura nu khariyu is a traditional Gujarati dish that uses baby radish and its soft leaves to highlight their rich flavours. This delicious stir-fry combines the earthy flavour of radishes with the aroma of spices to make a food that is both tasty and healthy.

Ingredients

6 to 7 small baby mooli with leaves 1 tbsp cooking oil ½ tsp Mustard seeds ½ tsp cumin seeds Pinch of hing ½ tsp salt (adjust to taste) ½ tsp turmeric powder ½ tsp chili powder (adjust to your spice preference) 3-4 tbsp besan

Step 1

Wash the mooli and remove any dirt or impurities from the radishes and trim off the root ends. Cut the radishes into very fine slices. Also finely cut the leaves if they are fresh and in good condition. Separate the chopped leaves from the sliced radishes.

Step 2

In a large skillet or frying pan, heat the oil over medium heat. Add the mustard seeds and cumin seeds once the oil is hot. Let them sizzle for a few seconds, or until they start to pop.

Step 3

Add hing, turmeric and radishes. Reduce the heat to low and immediately add the sliced mooli. Stir-fry for about 3-4 minutes.

Step 4

Sprinkle salt and chilli powder over the radishes and continue to stir-fry for another 5–7 minutes, or until the radishes are soft. Sprinkle besan on the radishes that have been cooked. Mix well so that the besan covers the radishes evenly.

Step 5

Cook for another 2 to 3 minutes, stirring constantly, until the besan is well mixed in and the dish tastes a little bit roasted. Taste and alter the seasonings. Serve hot.
