No real Vada Pav is complete without chutney. Dry vada pav chutney is a popular condiment that is often served with the famous Mumbai street food, vada pav. This chutney is made with a combination of different spices and flavours that enhance the taste of the vada pav.
1 cup desiccated coconut 2 tbsp sesame seeds 1 tbsp cumin seeds 1 tbsp coriander seeds 5-6 dried red chillies 1 tsp salt 1 tsp sugar 1 tsp garlic powder
Dry roast the sesame seeds, cumin seeds, and coriander seeds in a pan on low heat until they start to release their aroma. Make sure not to burn them.
Add the dried red chillies to the pan and roast them with the spices for another minute.
Once the spices have cooled down, transfer them to a blender or a food processor.
Add the desiccated coconut, salt, sugar, and garlic powder to the blender and blend everything together until you get a fine powder.
Transfer the chutney powder to an airtight container and store it in a cool, dry place.
