Coconut is a widely used ingredient in India, especially in the southern region. From sweets to gravies, it gets a lot of importance in the Indian culinary scene. Here is a quick recipe for a batch of multipurpose coconut gravy.
250ml coconut milk 1-inch ginger 1 onion 1 tomato 1 tsp cumin 1/2 tsp turmeric, pepper 1 tsp coriander, fennel ¼ tsp garam masala 1 tsp red chilli powder, sugar Salt to taste 2 cloves of garlic 1 tbsp oil
In a heated kadhai, add oil and cumin seeds. Once the seeds start to crackle, add onion puree and turmeric powder.
As soon as the onion paste starts turning brown, add tomato puree. After sauteing for 5 minutes, add ginger-garlic paste.
Add spices and roast the masala until it releases oil. Add coconut milk and stir so that you lump less concoction.
Add pepper and brown sugar. Let the ingredients simmer on a low flame.
When the gravy comes to a boil, turn off the flame.
At this point, you can either store this gravy or add any vegetable or meat and prepare a lip-smacking delicacy.
