1.5 cups chopped cucumber ¼ cup moong dal 4-5 curry leaves ½ tsp lemon juice Salt as needed ½ tsp mustard seeds 2 tsp oil 3 tbsp grated coconut 1 chopped green chilli Water as needed A pinch of hing
Rinse moong dal and soak it for a couple of hours.
Drain the excess water and add the lentils into a deep bowl.
Toss the lentils with cucumber, chopped coriander leaves, grated coconut, and green chillies.
Add lemon juice and salt. Mix everything well.
Heat another pan and prepare the tempering of mustard seeds, hing, and curry leaves.
Toss the salad with tempering and enjoy.
