Moong Dal Parathas are wholesome and flavourful stuffed flatbreads made with spiced yellow moong dal filling. These parathas are pan-fried until golden and served with yoghurt, chutney, or pickles.
1 cup yellow moong dal 2 cups whole wheat flour 1 onion 2-3 green chillies 1 tsp cumin seeds 1 tsp garam masala 1 tsp coriander powder 1 tsp red chilli powder Salt Fresh coriander Ghee or oil
Rinse and soak the moong dal for 30 minutes. Drain and cook in a pot with enough water until soft but not mushy. Drain excess water and mash the dal lightly.
In a pan, heat a little oil. Add cumin seeds, onions, and green chilies. Sauté until onions are soft. Add the cooked moong dal, garam masala, coriander powder, red chilli powder, and salt.
Mix well and cook for a few minutes until the mixture is dry. Add fresh coriander leaves and let the filling cool.
In a bowl, combine wheat flour, salt, and water to form a soft dough. Cover and let it rest for 15 minutes.
Divide the dough into small balls. Roll out each ball into a small circle, place a spoonful of the moong dal filling in the center, and close the dough around the filling. Roll it out again gently into a paratha.
Heat a tawa and cook each paratha on both sides, applying ghee or oil, until golden brown.
