Kosambari is a healthy and refreshing salad from the Indian state of Karnataka. It is typically made with split green gram (moong dal), grated carrots, and grated cucumbers.
1 cup split green gram (moong dal), soaked in water for 2-3 hours 1 cup grated carrots 1 cup grated cucumbers 1/4 cup grated coconut 2-3 green chilies, chopped 1/2 lemon, juiced 1/2 tsp mustard seeds 1/2 tsp cumin seeds A few curry leaves Salt to taste 2 tbsp chopped coriander leaves
Drain the soaked moong dal and keep it aside. Now take a big bowl and mix grated carrots, grated cucumbers, grated coconut.
Add chopped green chilies, and soaked moong dal. Mix everything together. Add salt and lemon juice.
Now In a small pan, heat some oil and add mustard seeds, cumin seeds, and curry leaves.
Now when they splutter pour the tempering over the salad. Mix everything together.
Serve this chilled, garnish with chopped coriander leaves. Enjoy!
