Idli batter is usually prepared using urad dal and rice, poha, or rava. However, if you want to make the South Indian staple healthy, create the batter using moong dal. Here is a nutritious recipe to try.
¼ cup curd 1 cup moong dal 2 chopped green chillies 1 tsp cumin, chana dal 1-inch ginger 1 tsp salt ½ cup grated carrot 8-10 curry leaves ½ tsp fruit salt, mustard seeds 2 tbsp coriander leaves 2 tbsp oil A pinch of asafoetida
Soak moong dal in water for a couple of hours and grind it into a smooth paste.
Transfer the paste to a bowl and add chillies, carrots, coriander leaves, curd, and spices.
Mix the ingredients well and keep them aside for 15 minutes.
Add fruit salt to the blend and grease the idli moulds.
Add a ladle of batter to each mould and steam idlis for 15 minutes.
Enjoy moong dal idlis with chutney, sambar, or rasam.
