Moong Dal Chakli is also known as Murukku in South India, is a crispy and savoury snack made from moong dal (split green gram) and rice flour. It's a popular snack during festive occasions and also a teatime treat.
1 cup rice flour 1/2 cup moong dal (split green gram) 1 tsp cumin seeds 1 tsp sesame seeds 1/4 tsp asafoetida (hing) 1/2 tsp turmeric powder 1 tsp red chilli powder 2 tbsp butter or oil Salt Water Vegetable oil
Wash the moong dal thoroughly and soak it in water for about 30 minutes. Drain the water and cook the moong dal in a pressure cook for about 2-3 whistles.Once cooked, mash the dal well to form a smooth paste.
In a bowl, combine the rice flour, moong dal paste, cumin seeds, sesame seeds, asafoetida, turmeric powder, red chilli powder, and salt.
Add the butter or oil to the mixture and mix well with your hands. Gradually add water, little by little, to form a smooth and soft dough.
Use a chakli maker or murukku press fitted with a star-shaped or round nozzle. Fill the press with a portion of the dough.
On a greased plate or a piece of parchment paper, press out the dough into spirals or coils, starting from the centre and moving outward to form a chakli shape.
Heat vegetable oil in a kadhai. Fry the chaklis until they turn golden brown and crispy on both sides, turning occasionally for even cooking.
