Enjoy the authentic taste of Goan cuisine with this Mooga Gathi, made from sprouted moong dal. This dish offers a delightful blend of flavours and is a staple in Goan cooking.

2 cups of sprouted moong 2 slit green chilies 1 cup grated fresh coconut 1 chopped onion 4-5 local Goan red chillies and 4-5 kashmiri red chillies ½ tbsp of turmeric powder Dry spices like 1 tbsp of coriander seeds 3-4 peppercorns 4-5 cloves ½ nutmeg ½ inch cinnamon 1 bay leaf ½ tbsp of turmeric powder 2 tbsp of garam masala 1 tbsp of salt 1 tbsp of mustard seeds 2 tbsp of coconut oil Handful of curry leaves Coin size jaggery
In a vessel add moong, green chillies and salt and boil on medium flame till moong is 80% cooked.

Dry roast coconut and onion in a little oil. In a mixer jar, add coconut, onion, turmeric, red chillies, dry spices and blend smooth using water.

Once the moong are cooked well add the masala paste and jaggery and mix well. Let it simmer on medium flame for 3-4 mins till it comes to a boil.

For tadka, add coconut oil, mustard seeds and curry leaves in a tadka pan and let it splutter well. Add the tadka to the gravy and give a final mix!! Once done, serve hot and enjoy!!
