Make this refreshing and juicy salad with one of the season's delicious stone fruits — the peach, for a delicious snack or small plate to share.
2 large tomatoes, sliced 2 peaches, quartered 1 small onion, sliced 10-12 fresh mint leaves 1 ball burrata cheese (optional) 2 teaspoons balsamic vinegar 1 tablespoon olive oil 1 teaspoon maple syrup Juice of ½ lemon Salt and pepper, to taste
Place the sliced tomatoes and quartered peaches on a plate.
Tear and sprinkle the mint leaves and sliced onions over the peaches and tomatoes.
Mix together the balsamic vinegar, olive oil, salt, pepper, maple syrup and lemon juice in a small bowl.
Pour over the salad and tear small pieces of burrata cheese to place all over the salad.
Serve immediately or chilled, after refrigeration.
