With rain pouring all day, we are loving the cold and cozy weather. As much as we love the weather, we often fall sick. To boost our immunity, we consume soups that satisfy our soul as well as our appetite. We make soup at our home and one of the most common is chicken soup. Apart from boosting immunity, the soup also is a great option for evening. Take a look at recipe:
250 gms chicken 1 carrot ½ cup sweet corn 1 potato optional 1 cup ay vegetable of your choice (optional) - cauliflower, celery, cabbage 2 tbsp lemon juice 1 tbsp ginger chopped 1 tbsp garlic chopped 1 tsp ghee 1 bay leaf 4 pepper corn 2 inch cinnamon piece
Add chicken, potatoes, mixed vegetables and 3 cups water to a cooker
Tear the bay leaf and add break the cinnamon. Add pepper corn
Pressure cook for 3 whistles , boil until the chicken is tender & fall off the bone. Shred the chicken aside
Heat a pan, add oil and saute ginger and garlic for a minute
Add carrot and sweet corn fry for a minute
Add the chicken stock to the pan and boil corn and carrots for a minute until they become soft.
Add salt and shredded chicken
Cool down the chicken soup a bit and add lemon juice and black pepper powder
