With calm and cozy weather owing to the downpour all across the city, demands for a bowl of luscious broth. A nice broth that is infused with a blend of aromatic spices and fresh ingredients is perfect to comfort you this season. Take a look at some of the local broths of India:

Paya Shorba 

It is the traditional soup hailing from the northern states which is made from tender lamb and goat trotters. It is simmered with aroatic spices. 

Thukpa 

It is a Tibetan-inspired noodle soup that has made its way through the northeastern states of India. Vegetables, meat (usually chicken or pork) and noodles is cooked in a flavourful broth.  

Mulligatawny Soup 

This Anglo-Indian soup originated in Tamil Nadu is a fusion of Indian and British flavours. The recipe involves a delightful blend of lentils, vegetables, chicken, or mutton cooked with coconut milk and a distinct touch of curry spices. 

Sol Kadi 

This soup hails from the coastal regions of Maharashtra and Goa. Sol Kadi is a soothing and tangy broth. It is made from kokum fruit, and coconut milk, and infused with garlic, green chillies, and cumin. 

Nihari 

Nihari is an iconic broth from Delhi. It is a slow-cooked concoction of tender meat, often lamb shank, enriched with spices like garam masala, ginger, and fennel seeds. 

Mutton Yakhni 

Hailing from the Kashmir Valley, Mutton Yakhni is a rich and aromatic broth made with tender mutton, yoghurt, and an array of fragrant spices like saffron, cardamom, and fennel.
