Found in states like Maharashtra, Gujarat, West Bengal, Odisha, and parts of southern India, this veggie is crunchy and delicious.
This tuberous plant Suran, Jimikand, and Elephant Foot Yam and is used to make curries, fries and so much more.
As a leafy vegetable, Dinda leaves are typically used in regional cuisines, especially in dishes such as curries, stir-fries, and soups.
This one comes various shades of red, pink, orange, yellow, and even purplish hues and is used to make saag and curries.
The tender shoots of bamboo are especially popular as a delicacy in India’s Northeastern states in the form of pickles, curries and more.
Also known as water spinach, this one is particularly popular in states with coastal areas, such as Kerala, Tamil Nadu, Karnataka, Andhra Pradesh, Odisha, and West Bengal.
Used more as a medicinal herb rather than a green leafy veggie, this one is grown in Madhya Pradesh, Rajasthan, and Maharashtra.
Also known as Cassia Tora, Takla is approved by both Ayurveda and traditional Chinese medicine as a healing herb.
Though not used commonly as a culinary vegetable, Bharangi is used in Ayurveda to cure common monsoon ailments.
Another herb with incredible medicinal properties, this one has bioactive compounds that are believed to have therapeutic effects.
