Kantola

Found in states like Maharashtra, Gujarat, West Bengal, Odisha, and parts of southern India, this veggie is crunchy and delicious.

Shevala

This tuberous plant Suran, Jimikand, and Elephant Foot Yam and is used to make curries, fries and so much more.

Dinda

As a leafy vegetable, Dinda leaves are typically used in regional cuisines, especially in dishes such as curries, stir-fries, and soups.

Kurdu 

This one comes various shades of red, pink, orange, yellow, and even purplish hues and is used to make saag and curries.

Bamboo Shoots

The tender shoots of bamboo are especially popular as a delicacy in India’s Northeastern states in the form of pickles, curries and more.
