Misti Kumro Makha or Bhorta, or Savoury Pumpkin Mash, is a delicious Bengali dish best served with hot steamed rice. This is a comforting dish that can be prepared quickly and easily.

Cut the pumpkin into pieces and roast them on a tawa with a little mustard oil. Add a little salt and turmeric, a little water, and a lid to fully soften the pumpkin pieces.

Sauté some garlic and dried red pepper in mustard oil till fragrant, then mash them up.

Then, add raw onion slices and chopped coriander to the roasted pumpkin and lightly mash everything together. To finish, taste for seasoning and add a splash of mustard oil.
